About Me

My photo
Welcome to my ScandinAsian food blog. A blog about what I like to make in my little Norweigan kitchen, from homemade meals to fun creative sandwiches. My parents gave me the name Sorieya, a Cambodian name, which means sun. I'm originally from the United States. Now I'm currently living in Norway, married to a Norwegian man with 3 beautiful children. It's hard being away from my family back in the States and I miss them everyday. I am not an artist but I love making fun sandwiches for my kids. I am not a professional chef but I love to cook and I love being in the kitchen. I love introducing my children to different kind of international food, introducing food from my childhood and explaining to my kids the history about their culture and food. I love spending those quality time together teaching my little ones how to make bread, Khmer food, and teaching me Norwegian. My Norwegian isn't that great but I do understand just the basics but speaking it, that's another story.

Blueberry Cheesecake want to be danish

Yesterday in my kitchen at my kantina I had made blueberry cheesecake danish, it's similar to a danish and I also made my usual homemade chocolate chip muffins. I always wanted to try making this.
When I'm in the States I would buy something similar for breakfast. I don't eat so much of it but once in a while I would treat myself to one of these sweet pastry. The filling for my danish is simple and easy to whip up.

Ingredients
200 grams Philadelphia cream cheese at room temperature
1/2cup sugar
1 tablespoon vanilla sugar
1 tablespoon flour

1 1/2 cup fresh blueberries

In a mixing bowl combine cream cheese, sugar, flour, and vanilla sugar, blend well with a whisk. Set a side.

Roll my  pastry dough on a floured surface and shape into a  rectangle

Cut about 1/2 inch diagonal strips up each side of the dough. Spread carefully cream cheese filling in the center, then topped with blueberries.

Fold strips dough pieces up over the filling, pressing each strips together so it sticks.

Fold end of the dough so nothing would leak out and place on a baking sheet.

 I only made 5.

Baked in the oven at 200 degrees C for half hour until golden. Take out of the oven, let cool. Sprinkled over with powdered sugar or drizzle with icing.

Homemade chocolate chip muffins ready to be baked.

Lunch I made for my son with my homemade muffin.
