Stuffed Crepe Square

 Sunday Brunch




In a bowl I added 1 cup all purpose flour, 1 tablespoon sugar, and 1/2 teaspoon salt.




Then I added 1 1/2 cup cream, 4 eggs, 3 tablespoon melted Flora plant margarine.





Whisked everything well and let rest for 15 minutes.



In a non stick skillet on medium heat I coat with a little margarine, I used a ladle and added flour batter and swirl cover skillet. Cook for about 2-3 minutes
 Flipped over and cook other side for 2-3 minutes. I mixed cream cheese, a little cream, and spinach and spread on top of my crepe and added bacon, Then I folded edges of crepe and shape as a square. Transfer on a plate and top with sunny egg and a side of salad. I saved the rest of batter for later today.
