Panko Coconut Tempura Pork with homemade peanut sauce





I sliced pork loin very thin and seasoned with little salt, sitron pepper, garlic powder, seasoning sauce, and grilled seasoning. Mixed well with my hand.




I made a simple coconut tempura batter.

Coated seasoned pork with coconut tempura batter.




Then in panko crumbs.
In a deep skillet on medium/high heat added about 1/2 cup less peanut oil. When oil is hot fried panko coconut tempura pork. About 4-6 minutes on each side until golden crispy. Place on a lined paper towel to get rid of excess oil.
 I made homemade sweet peanut sauce.

1/4 cup red curry paste
1/2 cup natural creamy peanut butter
1 teaspoon salt
3/4 cup sugar
2 tablespoons sweet coconut powder
2-3 tablespoons fish sauce
1/2 cup coconut milk

1/2 cup toasted peanuts
dash dried red pepper flakes

In a deep sauce pan added all ingredients stirred and whisked constantly, brought to a boil, lowered heat. Let simmered for 5 minutes, stirred so it would'nt stick to the pan added toasted peanuts and a dash dried red pepper flakes. Remove sauce pan from heat and let sauce cool.

I served Panko Coconut Tempura Pork topped with my homemade peanut sauce, steamed hot jasmine rice, and salad. My family said it was very yummy, crispy, and the sauce was delicious.
