Welcome to my ScandinAsian food blog. A blog about what I like to make in my little Norweigan kitchen, from homemade meals to fun creative sandwiches. My parents gave me the name Sorieya, a Cambodian name, which means sun. I'm originally from the United States. Now I'm currently living in Norway, married to a Norwegian man with 3 beautiful children. It's hard being away from my family back in the States and I miss them everyday. I am not an artist but I love making fun sandwiches for my kids. I am not a professional chef but I love to cook and I love being in the kitchen. I love introducing my children to different kind of international food, introducing food from my childhood and explaining to my kids the history about their culture and food. I love spending those quality time together teaching my little ones how to make bread, Khmer food, and teaching me Norwegian. My Norwegian isn't that great but I do understand just the basics but speaking it, that's another story.

Quick and easy mac and cheese

Today I didn't feel like cooking, just needed to make something quick and what I had in my kitchen. I have made a lot of mac and cheese but this was one of the best mac and cheese I've made so far. Quick and easy with just 8 ingredients.



Santa Maria Cheddar cheese style dip, Philadelphia skinke(ham) Italian style cream cheese, Kavi chorizo & Parmesan cheese, Popcorn seasoning nacho cheddar, milk, broccoli diced bite size and steamed, sliced ham into small bite size, and macaroni.
In a medium pot on high heat, boiled macaroni for 7 minutes until tender, drained, pour back to pot. Added ham and broccoli, mixed and stirred well with wooden spoon. Added the 3 different cheese, nacho seasoning, and 3 tablepsoon milk (I used Tine extra light milk with vitamin D.) Mixed well and served while hot.

BBQ Pork and Homemade Blueberry Cheesecake Ice Cream

Dessert homemade blueberry vanilla bean cheesecake ice cream topped with caramel sauce.




Vanilla bean cheesecake ice cream

1 1/2 cups Philadelphia cream cheese
1 cup sour cream
1/2 cup granulated sugar
1 tablespoon vanilla sugar
1 vanilla from fresh vanilla pod
2 cups fresh blueberries

In a large bowl combine and whisk cream cheese, sour cream, sugar, vanilla sugar, blend well. Split and scrap out vanilla seeds and stir into cheesecake mixture, pour in fresh blueberries and mix well. Pour blueberry cheesecake filling into a container, cover, and into the freezer for 5 hours or overnight. I served with caramel sauce, vanilla ice cream, whipped cream, and sprinkled cappuccino powder.

Barbecue Sauce





Left over grill ribs and I turned them into a BBQ rib & sunny side grilled sandwich for lunch. I made homemade barbecue sauce which came out yummy.


Ingredients
1/2 onion, minced
3 cloves garlic, minced
3/4 cup bourbon
salt and freshly ground black pepper
1 tablespoon sweet paprika
1 tablespoon cayenne pepper
2 cup ketchup
1 1/2 tablespoons Dijon mustard
1 tablespoon cider vinegar
1 tablespoon liquid smoke flavoring
1 tablespoon Worcestershire's sauce
3 tablespoons packed dark brown sugar
1 tablespoon honey
2 tablespoons molasses




In a large skillet over medium heat, heated 1 tablespoon cooking oil, I add the minced onion and garlic stir for couple minutes, then stirred in my bourbon and let simmer for 8 minutes. Then I mixed in ground black pepper, salt, cayenne pepper, sweet paprika, ketchup, Dijon mustard, vinegar, liquid smoke, Worcestershire sauce, honey, brown sugar, and molasses. Bring to a boil and reduced heat to medium low and let simmer for 15 minutes. Transfer sauce to a food processor and puree until smooth. Pour into a container or bowl and let cool at room tempurature. Sauce goes great with grilled chicken and pork ribs :)

Burgers, burgers, burgers and snack for movie night.....





This weekend is burger weekend. 4 different kind of hamburgers for my kids and I. My husband is out, so he is missing out. I've made slaw chicken, taco chicken, bacon beef burger, and breakfast burger. 

Snacks for movie night with my kids. I bought TGI friday potato skins 49kr- (8.20USdollars) and Kernal Seasoning 39kr-(6.50USdollars) from Meny which cost me a fortune. Hershey cookies and cream I bought at a local gas station which was 15kr (2.50USdollars) per package. I was happy about that. I thought it would cost 30kr (5 USdollars). The oven lays was 2 for 20kr (3.30USdollars) bought from Europris pluss. It usually cost 30kr (5 USdollars)just for one bag at Meny. My kids are very happy.

For my husband's lunch I've made BT club sandwich. I used freshly baked bread bought at a bakery, fresh sliced tomatoes, Norwegian bacon, ham cheese slices, and mayonnaise. He was a happy man.

Cole slaw like you get in the restaurant


1 head cabbage, diced 
4 carrots 
1 medium onion, minced
1/3 cup granulated sugar
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/4 cup light milk
cup Hellmann's mayonnaise
1/4 cup butter milk
tablespoons white vinegar
tablespoons lemon juice

  • Finely diced cabbage and carrots using a box grater over a large bowl, added minced onions. Mix vegetable well with a large spoon. Set aside. In a medium bowl I added rest of the ingredients (sugar, salt, pepper, milk, mayonnaise, butter milk, vinegar, lemon juice) stir well until smooth and pour mixture into vegetable mixture. Mix well with spoon, covered bowl and refrigerated overnight before serving.








I made this cole slaw yesterday for barbecuing and celebrating Norwegian Independence Day, 17th of May. It taste almost like KFC cole slaw. So I made BBQ grilled chicken burger slaw. My kids and especially my son liked it a lot. Strange because they are the most pickiest eater.

Grilled cheese Sandwich

One of the yummiest grilled cheese sandwich. Sunny eggs, English bacon, guacamole Norwegian yellow cheese on slices gourmet bread, grilled.
