Creamy chorizo broccoli/cauliflower cheese soup

 For lunch I made this delicious soup for my boys. 


2 tablespoon plant margirine
1 medium onion, minced
1-2 tablespoons all-purpose flour

1/2 cup milk
1/2 cup måt fløte (food cream/heavy cream)
2-3 cups chicken broth

1 vegetable knorr bouillion
3 cups fresh broccoli and cauliflower
1/2 teaspoon nutmeg
salt & pepper to taste
Chorizo sausages cut into bite size

Shredded Cheese ( I used gouda cheese)


In a sauce pan on medium/high heat, heated plant margirine, stirred in onion and flour for couple minutes until golden, slowly added milk and cream. Whisked until well blended. Remove from heat and set aside.

In a soup pot bring broth to a boil, added vegetable bouillion, broccoli and cauliflower, cooked until vegetables tendered. Stirred flour mixture into broth mixture. Strring constantly until soup was thick, creamy, and bubbleling then stirrd in nutmeg, salt, pepper, and sausages simmered for 4-6 minutes. Topped with cheese served hot with a side of toasted sliced bread.
