Cat in the Hat

Starting off American Mother's day weekend. The best part of being a mom to Norwegian/American kids is we get to celebrate mother's day twice a year. Every mom in the whole world should be appreciated because all the hard work and sacrifice they do for their children. I have to say I am so grateful and blessed to have such wonderful kids. I love being a mom. Time flies by fast and sometimes I wish all my kids were babies. I really miss that period when all were so tiny. My son will start 2nd grade this fall. My daughters are 2 and 3 years old and just couple more years they will start school. The lunch theme I made today was Cat in the Hat. One of my favorite childhood author Dr Seuss. My kids are fans too. I made cat in the hat out of 2 slices of bread with salami, ham, nori, and bacon cream cheese.
