Omelet muffins

Homemade Omelet Muffins

Perfect way to start your breakfast.

Ingredients
6 eggs
1 tablespoon måt flote or milk
salt & pepper
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1 teaspoon poultry seasoning
1 tablespoon seasoning sauce
2 shallots, minced
1 stalk green onion, chopped
1/2 small onion, minced
1/2 bell pepper, chopped
1 tomato, chopped
1/2 cup cheddar cheese


Preheat oven to 375 degrees F.
In a large bowl beat eggs and måt flote with a whisk, add salt & pepper, paprika, cayenne pepper, poultry seasoning, and seasoning sauce, whisk. Then add shallots, green onion, onion, bell pepper, tomato. Mix well.


Pour into muffin pan and add shredded cheese
Bake in the oven for 15 to 20 minutes on 375 degrees F. 

Serve warm with a side of wasa cracker & spread or a side of fruit bowl.
