Welcome to my ScandinAsian food blog. A blog about what I like to make in my little Norweigan kitchen, from homemade meals to fun creative sandwiches. My parents gave me the name Sorieya, a Cambodian name, which means sun. I'm originally from the United States. Now I'm currently living in Norway, married to a Norwegian man with 3 beautiful children. It's hard being away from my family back in the States and I miss them everyday. I am not an artist but I love making fun sandwiches for my kids. I am not a professional chef but I love to cook and I love being in the kitchen. I love introducing my children to different kind of international food, introducing food from my childhood and explaining to my kids the history about their culture and food. I love spending those quality time together teaching my little ones how to make bread, Khmer food, and teaching me Norwegian. My Norwegian isn't that great but I do understand just the basics but speaking it, that's another story.

Homemade Cheesy Chicken Meatball

My kids love these cheesy chicken meatballs. I made extra for my husband when he get home from his game night. These cheesy meatballs could be for meatball subs, meatball sandwiches, meatball pizza, or spaghetti and meatballs.


I used 1 1/2 - 2lbs ground chicken seasoned with salt, pepper, cayenne pepper, dash red pepper flakes black pepper, Italian seasoning, seasoning sauce. Then mixed with 1/4 cup Parmesan cheese, garlic powder, 1/4 cup cream cheese, 1/4 cup shredded Gouda cheese, fresh chopped parsley. Shaped to mini meatballs and coated them with seasoned breadcrumbs.






Cooked meatballs in olive oil on each side about 3 to 4 minutes. I laid them on a line paper towel to get rid of the excess oil. I made my pasta sauce.
Couple tablespoons olive oil
1 medium onion, minced
3 clove garlic, minced
less than half cup red wine
1 can crushed tomatoes
tomato paste
chopped fresh parsley
salt and pepper to taste



Heated olive oil in the same pan that I cooked my chicken meatballs. I added onions, stirred and cooked for 8 minutes, then added in garlic and cooked for 2 minutes. Added the wine and cooked on high heat for about 4 minutes. Stirred in tomatoes, tomato paste, parsley, salt, pepper and other herbs. I added tablespoons of cream, cream cheese and Parmesan cheese. Then added in meatballs to the sauce, covered and simmered on low heat for half hour. Served with cooked pasta and topped with grated Parmesan cheese.

Breaded seasoned cod

Breaded seasoned cod fillet served with homemade hollandaise sauce, homemade mashed potato, steamed broccoli, topped with chopped parsley, lemon wedges. This was easy to make. I don't like to eat fish but my kids and husband do. My husband said he would love it if I made fish more often.


I seasoned 6 cod fillet, both side with a little salt, garlic powder, lemon pepper, soy sauce, drizzled little lemon juice coated with herb bread crumbs. In a large skillet on medium high heat, heated 2 tablespoon olive oil and seared each side for couple minutes and baked in the oven for 10 minutes. While cod was baking, I made hollandaise sauce , steamed broccoli, and made mashed potatoes. 

Mini Cheesy Crispy Wonton Rolls


Today was just my kids and I. We made cheesy crispy wonton rolls. These were easy to make. One of their favorite snacks. I used wonton pastry stuffed with shredded gouda cheese, shaped as mini springrolls, brushed with a little egg wash and fried them for 2 minutes and served with sweet chili sauce.

Puzzle Sandwiches


Turkey and cheese puzzles sandwiches made with love for my daughter.  I just cut 2 sandwiches into puzzle shapes just using a sharp knife and scissor. She munched everything down.

My son was feeling sad lately so I made him a cell phone sandwich. It made me so happy to see him smile. His favorite ham and cheese.

Croissants sage breaded chicken sandwiches with lingonberry sauce




Lightly sage breaded chicken breast. Seasoned with garlic powder, onion powder, paprika, salt, pepper, cayenne pepper, grilled seasoning. Poured garlic marinade sauce over, mixed well with my hand. Then coated lightly with fresh fine bread crumbs. In a skillet I heated 3 tablespoons extra virgin olive oil. Cooked each side for 6 minutes until golden. Layed on a line paper towel to get rid of excess oil.




8 Baked fresh French croissants. Sliced  and toasted




Mixed half cup creme fraiche half cup lingonberry jam, and a tablespoon sugar.
Mixed well.



Spread lingonberry sauce on each slice of croissant, then added sliced breaded chicken.

Pork coconut curry soup

 Pork coconut curry soup with rice noodle. It was very yummy but spicy. 

I bought 400grams pork loin from Meny at CC Vest shopping center. I think I paid 39kr per kilo. I sliced pork into bite size. Seasoned with 2 tablespoons curry powder, salt, pepper, cayenne pepper, sugar, tablespoon fish sauce, dried red pepper flakes, tablespoon soy sauce. Mixed well with hand. Set a side.
About 2 1/2 tablespoons red curry paste. I used quite a bit of it. If you don't want it so spicy hot use less red curry paste.



1/2 cup of peanut sauce I made a day before.



1 onion, finely chopped
4 clove garlic, minced
1 tablespoon ginger, chopped
1 green bell pepper, finely chopped




 Fresh coriander.



In a large sauce pan on high heat, heated 2 tablespoons peanut oil, added in onion, garlic, green bell pepper, and ginger. Sauteed for 4 minutes.



Made a little center, pushed vegetable a side and added seasoned curry pork.




Stirred and cooked for another 5-7 minutes.



Then I stirred in peanut sauce and....




....added in red curry paste.



Stirred well, so everything is coated with peanut sauce and paste and cook for 6 minutes.
Poured in 2 cans coconut milk. Lowered heat, covered, and let simmered for 8 minutes.


I added 2 tablespoons fish sauce, more curry powder about 1 tablespoon, and a tablespoon sugar. Stirred in a handful chopped coriander. Covered and simmered for another 10 minutes or so.







While soup was simmering. In a pot, brought water to a boil, cooked rice noodle according to the directions. Drained.......



.....added cooked rice noodle to a soup bowl. Set a side.



For topping, a  handful fresh bean sprouts, lime wedges, and chopped spring onions.








Bowl with rice noodle, ladled curry soup over rice noodle. Topped with bean sprouts, spring onions, and a wedge lime. Served right away.

Mac and Cheese soup with a little extra

1 cup broccoli florets
1 cup cauliflower florets
1/2 cup uncooked elbow macaroni
1 cup shredded white cheddar and saved some for topping
1 package cream cheese
1 can condensed cream of chicken soup
1/4 cup måt fløte (cream)
1/2 cup chicken broth
1 teaspoon pepper
1 teaspoon garlic powder
dash nutmeg

crispy chopped bacon

I steamed my broccoli and cauliflower in a steamed bag, in microwave for 4 minutes.

In a large pot bring 8 cup of water to a boil and add about 1/2 cup macaroni and cook for 8 minutes until tender.

In a large saucepan on medium heat, I stirred in condensed soup, cream cheese, cheese, broth, garlic powder, pepper, and nutmeg. Whisked and stirred well, lowered heat and cook for 8 minutes. I kept stirring so it didn't stick to the pan. I drained macaroni and stirred into soup.  Ladle in a soup cup, topped with shredded white cheddar and crispy bacon. Served with a side of fresh baked sliced toasted bread.


Cheese Spinach Tortellini Vegetable Soup

One of my 3 little kids favorite soup. It's a lot of work but it's worth the smile on my kids faces.

In a medium bowl I combined 1 package of ricotta, Parmesan cheese, steamed spinach, nutmeg, a little salt and pepper. Mixed well and set a side.

In a large bowl I mixed 3 large eggs, 3 tablespoons water, 2 teaspoon olive oil, 1 teaspoon salt. Then I poured the egg mixture slowly into another bowl with 3 cups flour. I mixed with my hand until all ingredients combined. Covered bowl and and let rest for an hour.

On a clean work surface, dusted with flour. Remove dough from bowl, placed on a flour work surface, started kneading the dough for about 8 minutes. I rolled out dough by hand making a large rectangle shape, then I used a glass cup and cut dough into 4 inch round circle about 16 circle shape.

Placed about 1/2 teaspoon cheese spinach filling in the center of each circle dough, brushed egg wash on the bottom half of circle dough and folded over to seal. Shaped it to form of tortellini shapes.

In a soup pot I added 2 liter of water and salt when boiled, I added batches of fresh tortellini and cook for 4 minutes until floated to the surface. Then place of a strainer to drain and continued cooking the rest of tortellini.

In a soup pot I added about 10 cups homemade chicken stock, 3 chicken bouillon, 1 lb chopped already roasted chicken breast into bite size and add to the stock, salt, pepper, and other spices to taste, brought to a boil for 10 minutes, added 1 cup chopped carrots, 1 cup chopped celery with leafs, 1/2 cup frozen peas, 1/2 cup parsnip. Cook vegetable until tendered for about half hour. When vegetables were tendered I added  stuffed tortellini and a handful chopped parsley and let simmer for 7 minutes. I ladled soup into 4 soup bowls topped with parsley and Parmesan cheese. Served with hot french bread.

Sage panko crusted chicken with homemade Lingonberry sauce

Don't let the pink fool you. This actually taste really good. Homemade sage panko crusted chicken with homemade lingonberry sauce. I was shock that my kids ate it all. At first my kids were skeptic because it was pink but when I asked them to take just a small bite, they liked it. My son said, "Wow mom, this is pretty tasty."



1 1/2 lbs of boneless chicken breast, sliced thinly and seasoned with freshly ground black pepper, garlic powder, dried sage, grilled seasoning, and Worcestershire sauce.




Coat seasoned chicken breasts with a simple flour batter.




Planko crumbs seasoned with dried sage, paprika, white pepper, and garlic powder.
In a pan I heated 3 tablespoon extra virgin olive oil  on high heat and cook each side for about 4-6 minutes until golden and crispy. Transfer on a lined paper towel to get rid of excess oil.

In a bowl I mixed together 1/2 -3/4 cup lingonberry jam, less than 1/4 cup fresh lingonberries 1 cup creme fraiche, and 1 tablspoon sugar.

On a plate added 2 spoonful of my homemade creamy mashed potato, then placed sage planko crusted chicken on top and drizzled lingonberry sauce over chicken and topped with chopped spring onions.
