Red wine risotto with bacon and spinach

It was one of those days. Something I had in my kitchen and made red wine risotto with bacon and spinach.   Red wine I used is from Chili which went great with this risotto dish.


 First I diced 6 slices of bacon and cook with olive oil until crisp. Drain on paper towel and set a side.

In the same skillet add a tablespoon olive oil and added 1 large diced onions and 2 clove garlic. Saute for 8 minutes
 Then I added in 1 1/2 cup Arborio rice to the saute onions and garlic. Cooked rice until translucent on the outside for about 3 minutes.

 Added a cup of red wine and....
 2 cups of broth at a time to the risotto. Lower heat and let simmer. Kept stirring and stirring until it began to dry out and added some more broth and wine.
 Add in spinach, Parmesan, and more broth until rice is tender.
Simmering and stirred frequently so it doesn't stick and burn. 
 When rice is tendered remove from heat and season with salt for taste

Serve on a plate with crisp bacon and grated Parmesan cheese
