Welcome to my ScandinAsian food blog. A blog about what I like to make in my little Norweigan kitchen, from homemade meals to fun creative sandwiches. My parents gave me the name Sorieya, a Cambodian name, which means sun. I'm originally from the United States. Now I'm currently living in Norway, married to a Norwegian man with 3 beautiful children. It's hard being away from my family back in the States and I miss them everyday. I am not an artist but I love making fun sandwiches for my kids. I am not a professional chef but I love to cook and I love being in the kitchen. I love introducing my children to different kind of international food, introducing food from my childhood and explaining to my kids the history about their culture and food. I love spending those quality time together teaching my little ones how to make bread, Khmer food, and teaching me Norwegian. My Norwegian isn't that great but I do understand just the basics but speaking it, that's another story.

My Red Wine Italian beef stew

During the weekend I asked my family what would you like for dinner. BEEF STEW was the answer (husband). I've made this stew before, using South African red wine, tomatoes, beef....... This stew taste so good. When it simmers for hours, the smell is amazing, and taste even better the next day, and very filling. My husband loves stew than soup. I also made pork Spanish red wine soup for myself. That was also one of our favorites.

Ingredients
2 cups chopped carrots 1/2 inch thick
2 cups chopped celery including the leafy part (1/2 inch thick)
1 large onion, diced
1 lb potatoes diced into inch pieces
4 clove garlic, finely minced
2 tablespoon olive oil
tablespoon vegetable buljong powder
2-3 lbs høyrygg(rump roast) cut into 1 inch pieces
1/3 cup all purpose flour and corn flour combined
salt and pepper
Worcestershire sauce
all round seasoning
Italian seasoning
paprika(optional)
cayenne pepper(optional)
1 teaspoon dried thyme
3 1/2 cups beef broth
1/2 or 1 cup red wine
2 cans diced tomatoes
2 tablespoon chopped fresh parsley

Seasoned beef with salt, pepper, Worcestershire sauce, Italian seasoning, paprika, cayenne pepper all round and add flour. Coat beef evenly.

In a soup pot heat 2 tablespoons olive oil over medium/high heat. Add carrots, celery, onions, potatoes. Saute until lightly golden, then add garlic and saute for a minute.  Add a dash of salt & fresh ground black pepper, and a tablespoon vegetable buljong powder. Transfer to a bowl and set a side.

Return pot to medium/high heat. Add in 3 tablespoons vegetable oil. When oil is hot add beef, cook and stir occasionally for 6 minutes. Add red wine and 1/2 cup of broth. Cook and stir frequently scraping bottom of pan until sauce has thickens. Add remaining beef broth, red wine, diced tomatoes, thyme, sauteed vegetables. I seasoned a little more for flavor. Reduce heat, cover, simmer for 4 hours. Stirring occasionally until beef is tendered. Stir in parsley. Serve warm with a side of warm crusted french bread.





Pork with peach sauce


I found an article on Food Network Magazine in my Barnes&Noble nook. I came across Weeknight Cooking "Pork Chops with peach sauce". It's easy to make. My family especially my son and my husband love pork and they absolutely love this dish. Instead of serving green beans, I served homemade coleslaw and steam broccoli on the side. 



For the peach sauce
1/3 cup peach jam
2 tablespoons ketchup
2 tablespoon Worcestershire sauce
2 tablespoons apple cider vinegar
2 tablespoons cold butter cut into small piece


In a saucepan with tablespoons water on medium heat cook the jam, ketchup, Worcestershire sauce whisking until thickens for 5 minutes. Whisk in vinegar and butter (a few pieces at a time). Add in a few tablespoons water if the sauce becomes too thick. Remove from heat and cover.



For the Crispy Pork Chops
1 lb boneless pork loins. (I used what I had in my kitchen pork chops instead) 
 (optional seasoned and marinade pork with seasoning sauce, salt, all round, pepper, Cayenne pepper, dried thyme before coating) Let marinade for an hour.

1/2 cup corn flour

1 cup flour
1 tablespoon paprika
1 teaspoon baking powder
1 large egg
vegetable oil for frying

In a small bowl add in corn flour

In another bowl whisk 1 cup flour, 1 tablespoon paprika, baking powder, 1/2 cup water, egg, teaspoons Worcestershire sauce.

Coat each pork chops in flour, then dip in the flour batter. Fry until golden 4-5 minutes per side. Drain on paper towel. Serve with peach sauce and steamed broccoli.

Homemade Corn dog muffins

I've been having one of those days (homesickness) again. I just don't know how to handle it.  There has been a lot of shows that are featuring New England from Travel Channel to NRK. I guess it's a sign telling me I should make a visit. Someday when my kids are older. I would love to move back home to Maine. I like living in Norway, it has beautiful scenery, it's a beautiful country but nothing compares to Maine. I had made one of my child hood memories. Corn dogs. I made these for my 2 boys(my son & husband) when they come home from my son's training. He is training Kung Fu every Tuesday. Instead of frying them I baked them in my non stick muffin maker. It's very hard finding cornmeal in the local Oslo grocery stores. So I bought cornmeal while I was in Sweden. These turned out great. I also made homemade stuffed pizza muffins and homemade Orange Julius I haven't had those since 2003. I will post recipes later during the week.  

1/2 cup melted butter
2/3 cup white sugar
2 eggs
1 cup whole milk with 2 tablespoons cider vinegar
1/2 teaspoon baking soda
1 cup corn meal
1 cup wheat flour
1/2 teaspoon salt

In a large bowl combine dry ingredients and set a side.

In a mixing bowl combine and stir melted butter and sugar, mix well. Quickly add in eggs, beat until well blended. Combine whole milk/vinegar then add baking soda. Pour mixture into the dry ingredients until well blended. Stir in sliced hot dogs to the cornbread mixture. 

Pour batter in a non-stick muffin maker or pour batter in a lightly grease muffin tin and bake in the oven for 45 minutes at 175 degrees C.

Yellow Angry Birds

I had made these yellow angry birds sandwiches yesterday for my kids lunches. Just smoked turkey breast, cheddar cheese slices, white cheddar cheese slices, nori. Laughing cow cheese looking like yellow angry birds.

Handmade Pan Pizza, Chicago Style......

Today when I arrived to my kitchen at my kantina. I planned on making pastrami stuffed bread bowls and homemade American style pizzas. I checked my fridge their are more missing things. I had left over turkey pastrami in my fridge which I bought in Sweden  but guess what, it's missing. It cost way to much and with the small portion when you buy pastrami in Oslo. I'm pretty annoyed. Yesterday evening my husband told me that someone in the area has stolen slices of my homemade dinners pies I had made earlier which was for selling. He told me their were 2 slices left in the fridge but when I got there today, it was gone too! I'm really annoyed that someone is taking things from MY territory without asking me. I always keep to myself but this is gone to far. I'm trying to make a living and people who are stealing from me, it's not helping! What can I do, have to get a lock for my fridge as soon as possible! 

For today I had made handmade style pan pizza, Chicago style pizza, and bread bowl with marinara sauce, cheese, and should have been pastrami in it. I am not giving out my pizza dough recipe because it's the reaction I got from my family which lead to it. I had to bring my pizzas home because I'm afraid to leave it in my kitchen, someone might steal it. 

My husband thought I bought these pizzas or had ordered it. I had to show pictures,  "Yes I did make these with my own hands." 

"One of the best pizza's I've had!" My husband said. I asked him are you just saying this because I'm in the room with you. He said, "No! This is really good!" 
 This is just yeast and water.
 My pizza dough.
 Knead, rolled, and knead, shaped to get the perfect shape.
 2 pan pizza, 1 Chicago style, and seasoned bread dough

 My marinara sauce.

 Pepperoni, bacon, onions, green bell pepper, cheese, black olives.......

 My bread bowl stuffed with sauce, herb, cheese. I wanted to add pastrami (pastrami gone missing)

 Baked in the oven, let cool. My kitchen was smelling amazing. 
Ready to be slice and sold. 

Slow cooked Maple Wine Pork tenderloin

 This was what I made for my husband after coming home from work. He is one lucky man to have me in his life. Maine Maple Syrup, Apples, Wine, Pork tenderloin slow cooked. Served with steam broccoli, steamed long grain rice, entrecote, and a glass of red wine. 

I had pork tenderloin in my fridge and used what I had in my kitchen. 


 This is about 1.5 lb Danish pork tenderloin

1 1/2 lb Pork Loin
2 Italian Red Delicious Apples, sliced thin
Onions, sliced thin


 I made my marinade first and placed pork into the marinade, soaking for an hour. Made 4 slits on the pork to place apple slices in.

For my marinade.
 2-3 tablespoons Maine Maple Syrup
1 tablespoon Worcestershire's sauce
1/2 tablespoon dried Thyme
Salt & Pepper
1 teaspoon seasoning salt
1/2 teaspoon cayenne pepper
1/3 cup Red Wine (Lyngrove)
1 package Santa Maria garlic marinade
1 tablespoon vegetable oil
Apple and onion slices on the bottom of my pan. Placed pork on top, then sliced apples into the slits. Topped with more apples and onion slices. Pour my marinade over with some more red wine.  Covered and slowed cooked for several hours
Several hours later. 
Using the marinade as sauce. I cooked in a skillet with onions and a little dash of corn flour to make the sauce thicken. 
This turned out pretty yummy. I will definitely make this again.

Lego Lunch Theme

 Today lunch theme is LEGO. Who doesn't love Lego? Why not have it for lunch...and that's what I did for my kids. Lego head man sandwich made with turkey, cheddar cheese, nori on slices wheat bread cut into a Lego head man shape. I also made Lego man sandwich trying to lift weights but instead he loose both his arms.
