Welcome to my ScandinAsian food blog. A blog about what I like to make in my little Norweigan kitchen, from homemade meals to fun creative sandwiches. My parents gave me the name Sorieya, a Cambodian name, which means sun. I'm originally from the United States. Now I'm currently living in Norway, married to a Norwegian man with 3 beautiful children. It's hard being away from my family back in the States and I miss them everyday. I am not an artist but I love making fun sandwiches for my kids. I am not a professional chef but I love to cook and I love being in the kitchen. I love introducing my children to different kind of international food, introducing food from my childhood and explaining to my kids the history about their culture and food. I love spending those quality time together teaching my little ones how to make bread, Khmer food, and teaching me Norwegian. My Norwegian isn't that great but I do understand just the basics but speaking it, that's another story.

Norwegian Vafler

Our Saturday brunch homemade Norwegian waffles. Our kids favorite. Maine Maple Syrup and butter with Norwegian waffles perfect combination. My dad had tried Norwegian waffle at Oslo City when my parents came to visit during last Christmas. My mom had a panini instead. They weren't so impressed with their food. When my parents come and visit again I will make them my homemade waffles. I know my dad would like it more.

2 eggs
2 tablespoons white sugar
1 tablespoon vanilla sugar
3 tablespoon melted butter
2/3 cup milk
1 cup sour cream
1/4 teaspoon salt
1 teaspoon cardamon
1 1/2 cup all-purpose flour
1 teaspoon vanilla extract
3 1/2 teaspoons baking powder

2 tablespoon butter at room temperature for brushing.

Pre-heat a Norwegian waffle iron or any waffle iron

In a bowl mix and beat eggs, sugar, cardamon, vanilla sugar together with an electric whisk. Add in flour, baking powder, and salt. Mix well and beat in sour cream, milk, and butter until batter is semi smooth. Let the batter sit for 15 minutes before making the waffles. 

Brush some butter on the surface inside the waffle iron each time making waffle. Ladle 1/4 cup of the waffle batter in the iron and close the top of the waffle iron. Cook for 4 minutes until waffle become light brown. Remove waffle and transfer to a plate and  repeat. Serve warm. 

For the topping you could use anything, fresh fruits, ice cream, Norwegian goat cheese, strawberry jam or any jam and sour cream, butter, powder sugar, or Maine maple syrup. 

S'more want to be a danish

Earlier I've made with strawberries, apples, blueberries, chocolate, and other fruits. This time I made s'mores want to be a danish. The only Hershey's bars I found were with hazelnuts. I could of used cookies and cream or regular Hershey's bar but I didn't want to drive around and waste gas. So I used the hazelnut bars and mini marshmallows.
I spread my cheesecake filling first, then Hershey's and topped with mini marshmallows. Wrapped my pastry like a danish. Topped with more mini marshmallows and chocolate and baked in the oven. 
After coming out of the oven and letting it cool down. I cut a little piece and took one bite. WOW, it was dangerously yummy. Next time I want to make with pecan and maple or with nutella or nuggati.

Pork Wonton Soup

During the week I took a drive to the Asian market. I needed to get some more wonton wraps. I was planning on making fried pork wontons. I came across Chinese sausages while I was shopping and I haven't had in a long time. Every time I look for those sausages, they aren't in stock but this time I was lucky. I used to eat Chinese sausage with steamed rice and salted eggs which my mom would make. I miss my childhood and my mom's cooking. There should be a Cambodian restaurant in Oslo, someday! 

Yesterday my husband was not feeling well. He isn't so much into soup. Only if it's rich and creamy, my homemade Beef Pho noodles, or Asian soups. I thought I should make pork wonton soup to make him feel a little better. So that's what I did. He cobbled it down. I guessed he liked it. 

The broth is simple to make and delicious when simmering for a while.

The Chinese sausages that I was talking about earlier. It taste a bit different than the ones in the States. 



3 kilos of chicken thighs

I had 3 kilos of chicken thighs, I bought at Coop Obs. What we haven't had in a long time was American style fried chicken. I don't make these often and it came out great. 

1 1/2 kilos of chicken thighs (cut into drumsticks and thighs) I made fried chicken 

The other 1 1/2 chicken thighs I made baked maple/brown sugar BBQ chicken.

A link of my homemade fried chicken. I made it the same way except I add mayonaise to the chicken and didn't add so much hot sauce to the egg mixture.


Seasoned and marinaded chicken thighs.

Flour mixture (flour, cornstarch, paprika, other spices) 

 Egg mixture
Coated chicken in flour mixture, then egg mixture, then flour mixture again. Fried 3 chicken thighs at a time in vegetable oil for 10-14 minutes
Served with rice, kimichi, Thai sour sausages, and side of salad

Easter in a lunch box

I made an Easter theme lunch for my kids lunches. A chick in an egg sandwich, chick marshmallows, cheddar cheese and ham rolls. Isn't it cute? :-)

Wario Sandwiches


Lunch today was Wario sandwiches from Super Mario Bros. I made it with whole wheat bread, cheddar cheese, Jarlsberg cheese, salami, ham, and nori. 

All my kids are Super Mario Bros fan. Earlier I have made sandwiches (Mario, Luigi, Stars, Power up box, Boo, Cheap Cheap Fish, Yoshi.......)

Cow Sandwiches

My kids lunch today are square cow sandwiches made with bologna, salami, cheese, and mayonnaise.
I cut the crust off of 8 slices of whole wheat bread and shaped into squares. Add in my cold cuts, cheese, and mayonnaise. For the cows faces I used Jarlsberg cheese cut into square as the size of the bread slices. Placed on top of the sandwiches.  I cut out little circles from sushi nori for it's faces and eyes. Bologna for it's mouths and eyes. I cut out salami for it's nose rings. I think I will make more of these again serve with their favorite tomato and macaroni soup.
