I just had to make these Philly Cheese steak Egg rolls. My husband said it was kjempegodt ( very good) and he loved the dipping sauce. I made a lot. I have to freeze the rest because I don't want my husband to eat so much. Tomorrow I'm going to make mini classic egg rolls the way I always make them for family gathering.

Cambodian Marinade
I have made these so many times, Cambodian marinade. Can use it on pork, chicken, or beef. It's perfect for grilling.
3 tablespoon vegetable oil
3 tablespoons soy sauce
1 tablespoon Worcestershire sauce
2 tablespoon honey
2 tablespoon honey
2 tablespoons oyster sauce
1 teaspoon salt
1 tablespoon palm sugar
3 cloves garlic, minced
2 stalk green onion, minced
1/2 cup minced lemon grass

1 teaspoon black pepper
1/2 teaspoon minced hot chili pepper or cayenne(optional)
2 lbs pork chops
Put pork chops in a large container.
In a small bowl add vegetable oil and all ingredients, mix well, and pour marinade sauce over pork chops, mix well again so pork chop is well marinaded, cover. Refrigerated over night or at least 3 hours. Season pork chops with some salt and pepper before grilling or frying.
Serve with hot cooked rice, pickled veggies or sauteed green beans.

Bacon & Blue Cheese stuffed chicken breast
My husband favorite combinations bacon, blue cheese, bread crusted juicy chicken breast all in one. This was by far one of my family favorite dishes. Buying chicken breast is so expensive in Oslo. It's not 1.29 dollar a pound like it is back in the states. It's more like 15.50 dollars for 1 1/2 pounds for fresh chicken breasts but it was worth it. I made blue cheese sauce and added crispy bite size bacon and stuffed into chicken breasts. I also made homemade cheesy home fries.

1 1/3 cups mayonnaise
1 cup sour cream
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon ground black pepper
7 ounces blue cheese, crumbled
In a large bowl, I whisk together sour cream, mayonnaise, Worcestershire sauce. Then seasoned with dry mustard, garlic powder, salt and pepper. I stirred in blue cheese crumbles mixing/combining evenly. Covered and refrigerated for 24 hours.
I heated a non stick skillet and cooked 8 slices chopped bacon until brown and crisp. In a medium bowl I added my homemade blue cheese sauce and crisp bacon bites, stirred well. Stuffed blue cheese bacon sauce in chicken breasts.

Today I felt like cooking. I was in cooking mood and I out did myself this morning. With 3 little kids pulling on me, and letting the husband over sleep. Breakfast/brunch was great. These crepes are so delicious.
Ingredients
1 cup flour
1 tablespoon sugar
1/4 teaspoon salt
1 1/2 cups milk
4 large eggs
3 tablespoons melted butter
In a large bowl I combined and whisk (with an electric whisk on high speed for about 1-2 minutes) flour, sugar, salt, milk, eggs, melted butter. Let rest for 10 minutes.
I heated up a non-stick skillet over medium heat. I lightly coat skillet with plant margirine (could of use Pam spray). Then I add 1/3 cup crepe batter and swirl to completely cover skillet. Cook for about 2-4 minutes until underside of crepe started to lightly brown.
I loosen the edge of crepe with my spatula, lift it up, flip it over, and cook for another 2-4 minutes. Repeat until all crepes are done.

My Lani's first birthday cookies and cream sandwiches

I made her mini cookie and cream sandwiches resembling cookie monster for her first birthday. I can't wait for her to see it. She loves cookies.
Today is my Leilani's first birthday. She surprisingly came 2 months early, premature. It was such a quick delivery. She had been through so much beginning of her life. I never got to hold her the day she was born. Those 2 hours when she stopped breathing, we thought we lost her. It was mind blowing that she had this illness, we never knew, and had to have surgery 3 days after she was born. I had been through this before with Rebecka, it was a little different with Leilani because we never expected this. Just being beside her, watching her through this glass over her bed, medical wires, feeding tube, such a tiny baby with all these things while slowly healing from her surgery. It was heart breaking that I couldn't hold her and comfort her. She is my little miracle. I'm so thankful for those surgeons and nurses at UllevÄl hospital for fixing and taking wonderful care of her. I will always be thankful. Without them she wouldn't be here. Now she is healthy, happy, beautiful 1 year old girl. I'm sad that she is not a baby anymore. Happy 1st Birthday to my Leilani!

Chocolate Mousse
My homemade chocolate mousse. This is one of my favorite desserts and simple to make.
I aslo made homemade short bread drenched in caramel sauce with a side of strawberry sauce and drizzle with chocolate glazed.
