Welcome to my ScandinAsian food blog. A blog about what I like to make in my little Norweigan kitchen, from homemade meals to fun creative sandwiches. My parents gave me the name Sorieya, a Cambodian name, which means sun. I'm originally from the United States. Now I'm currently living in Norway, married to a Norwegian man with 3 beautiful children. It's hard being away from my family back in the States and I miss them everyday. I am not an artist but I love making fun sandwiches for my kids. I am not a professional chef but I love to cook and I love being in the kitchen. I love introducing my children to different kind of international food, introducing food from my childhood and explaining to my kids the history about their culture and food. I love spending those quality time together teaching my little ones how to make bread, Khmer food, and teaching me Norwegian. My Norwegian isn't that great but I do understand just the basics but speaking it, that's another story.

Vanilla bean cheesecake ice cream cone-li


Stuffed vanilla bean cheesecake ice cream cone-li. Topped with homemade chocolate sauce, caramel sauce, and roasted chopped pecan nuts. Perfect combination and one of my family favorites dessert.



Vanilla Bean Cheesecake filling

1 tablepoon soft butter
3 teaspoon vanilla
16 ounces Philadelphia cream cheese soften
1 cup sour cream
3 tablespoon all purpose flour
1/2 or 1 cup sugar
1 Vanilla pod bean removed
1 teaspoon vanilla sugar 

8 ice cream cone



In a large bowl with electric whisk combine cream cheese, sour cream, flour, sugar on low to medium speed. Mix well so that the sugar dissolves. Add soft butter, vanilla sugar, and beans from the vanilla pod to the mixture and blend until smooth. Cover and let chill in refrigerator for an hour.

I spooned in vanilla bean cream cheese mixture carefully in ice cream cones. Drizzled on top with homemade chocolate sauce and caramel sauce. Topped with toasted pecan nuts.







Creamy mushroom pork chops

For dinner today I've made creamy mushroom pork chops served with homemade mashed potatoes topped with chives.



I seasoned and marinade 4 pork chops. ( salt, pepper, cayenne pepper, seasoning salt, garlic powder, and Worcestershire sauce.


Chopped 1 large onion and about 1 lb diced mushrooms.


 In a non stick pan, I heated on medium/high heat 1 tablespoon olive oil, sauteed onions and mushrooms. I added 2 tablespoons white wine. Then transfer onion and mushrooms to a plate and set a side.


With the same pan on high heat, I added 1 tablespoon plant margarine and fried pork chops until cook through about 10-12 minutes. Transfer to a plate, set a side.




Return my sauteed onions and mushroom and cook for another 2 minutes on medium/high heat.






Added 2 cans of Campbell condensed mushroom soup, 1 tablespoon soy sauce, dash black pepper. Stirred well. Then added cooked pork chops on top of mushrooms soup, covered and let simmer for half hour. Serve with homemade mashed potatoes and topped with chopped chives

Homemade chicken salad


For lunch I wanted to use leftover chicken so I made chicken salad. One of the best I've made so far. My kids kept on asking for seconds. It went great with fresh baked bread.

Chopped celery with leaves included, cucumbers, and onions.












Roasted chicken chopped bite size, dried cranberries, diced apples, & added homemade tangy mayonnaise.
Mix everything well and seasoned with salt and pepper. Chill in refrigerate for an hour.
 Serve on fresh baked bread
I made about 6 chicken salad sandwiches and cut into halves. I was very shocked that my kids ate them all. They are very picky eaters especially my daughters.

Friday's dinner and dessert



I wanted to have something simple and nothing heavy. So I made this simple Asian chicken soup (homemade chicken broth, whole chicken cut up seasoned with soy sauce, fish sauce, sugar, lime juice, salt, pepper, other spices. Served with rice noodle, bean sprouts, slices chicken breast, chopped green onions. It also went well with cooked hot jasmine rice. This was perfect for this cold cloudy weather.


For dessert I made homemade chocolate cheesecake with fresh strawberries drizzled with chocolate. I made it into a heart shape. Norwegian strawberries are so sweet. It's something special. Taking a bite of this dessert is heaven in your mouth.

Pepperoni and meatball marinara grilled 3 cheese sandwich

Homemade pepperoni and meatball marinara grilled 3 cheese sandwich. I could only eat half because it was very filling but tasty. My daughters were the same as me, couldn't eat all of it but my boys could. My homemade mini meatballs were succulent and went perfectly with my homemade marinara sauce.

Ingredients for my mini meatballs

1 lb 90% lean ground beef
1/2 small onion, minced
2 clove garlic, minced
salt & black pepper
seasoning salt
1/2 teaspoon cayenne pepper
1-2 tablespoons Worcestershire sauce
1/2 cup bread crumbs
1/2 cup Parmesan cheese

I mixed all ingredients well and shape into mini balls and fried them in olive oil. 

I made my own marinara sauce. Tomatoes, tomato paste, parsley, oregano, garlic, olive oil, red wine...........

While marinara sauce simmered I stirred in mini meatballs, diced pepperoni, sausages, extra Parmesan cheese.

For the sandwich I used fresh baked bread slices and 3 cheeses (shredded mozzarella, Norwegian cheese, extra Parmesan cheese) 

First I grilled 1 sliced bread in a skillet over medium high heat with 1 tablespoon plant margarine, cook for 2 minute on one side and  flipped over. Then topping my bread slice with 2 Norwegian cheese slices, 6 slices pepperoni, topped with Parmesan cheese, spooned in meatball, pepperoni, sausage marinara, topped with shredded mozzarella cheese, with another 2  Norwegian cheese slices and topped with another bread slice. Turned sandwich over and grilled for 3-4 minutes until cheese melted.

Omelet muffins


The other day I bought a non stick muffin/cupcake maker at Jernia. I'm in love with it. It's so fun making cupcakes with my kids and quality time with them. My son was such a huge help when we made cookie and cream cupcakes for a birthday gathering.

Today I made pølse(hot dogs) and green onion omelet muffin. It was quick and delicious.

Cambodian pork spring rolls


I love making spring rolls but I hate peeling those spring roll pastries. I learned to make spring rolls from my mom. She makes amazing Cambodian/Asian food. I miss it a lot. My husband's family loves my spring rolls. I have made these pork spring rolls for tomorrow birthday gathering.


For the filling you could use pork, beef, chicken, shrimps and any veggies. I used ground pork in my spring rolls.

Here is my pork filling:

2 cups shredded Chinese cabbage
1 cup shredded carrots
1 Chinese round garlic, minced
2 medium onion, minced
1/2 cup chopped fresh coriander leaves
2 stalk Chinese green onions
2 lbs ground pork
4 tablespoons oyster sauce
2 tablespoons golden mountain seasoning
salt and freshly ground black pepper
1 cup shredded potatoes (optional)

(I also added in Worcestershire sauce, seasoning salt, extra oyster sauce or meat seasoning for more taste.)



























Mix all ingredients well with hand so everything is well combined.






 2 packages spring roll wrappers(small)

1-2 egg and 1 tablespoon water mixed/whisk in a small bowl.


If using those small spring roll pastry,  place approximately 1/2 tablespoon of the pork mixture in the center of spring roll wrappers. Roll wrappers around the mixture, folding edges inward to close. Moisten fingers in the egg wash mixture, and brush wrapper seams to seal.

I used corn oil to fry my pork spring rolls. Can also bake them in the oven too.
